I lived in Wichita for 5 years in the '70's. While there, I developed a love for corn relish, which was served at most salad bars and in several homes.

Here in the West (I include both Arizona and California) I find only Mrs. Nalley's at $3.99 a small jar, and it isn't very good in comparison to what I came to crave in Kansas.

So, has anybody made corn relish out there, and have a favorite recipe they would like to share?

Cliff here is one I have used in the past. :Smile 1: I got the recipe from a Candian Cooking Magazine, originally.

Corn Relish

This recipe makes 6 cups servings
Ingredients
2 cups (500 mL) white vinegar
1 cup (250 mL) granulated sugar
1 tbsp (15 mL) salt
1 tbsp (15 mL) dry mustard
1/2 tsp (2 mL) celery seeds
1/2 tsp (2 mL) turmeric
1/2 tsp (2 mL) hot pepper sauce
5 cups (1.25 L) corn kernels
1-1/2 cups (375 mL) finely chopped onions
1 cup (250 mL) finely chopped celery
3 tbsp (45 mL) all purpose flour
1 cup (250 mL) diced sweet red peppers
1 cup (250 mL) diced sweet green peppers

Preparation:
In large Dutch oven or saucepan, bring vinegar, sugar, salt, mustard, celery seeds, turmeric and hot pepper sauce to boil. Stir in corn, onions and celery; reduce heat and simmer, stirring often, until softened, about 20 minutes.

Whisk flour with 3 tbsp (45 mL) cold water; whisk into pan. Add red and green peppers; bring to boil and cook, stirring often, until thickened, about 5 minutes.

Fill hot 1-cup (250 mL) canning jars, leaving 1/2-inch (1 cm) headspace. Cover with prepared lids. Screw on bands until resistance is met; increase to fingertip tight. Boil in boiling water canner for 10 minutes.

That looks mighty tasty!

I have cold packed (peaches), but never canned. This will be an adventure!

Any idea approximately how many ears of corn it takes to get 1 quart of kernels? Thinking
