Tried this out two or three weeks back with the aid of my grandma's cookbook. The following is only an approximate measurement so please take note.

5kg double minced pork shoulder
7 sweet peppers
8oz pin head rusk
8oz water
5 teaspoons of onion powder
50g of salt
10g of black pepper
herbs seasonings from the garden or the store(can't remember exactly what I used but it would mainly have been parsley, rosemary and thyme)

Chop peppers into fine dice and roast in the oven with olive oil for twenty minutes at 150 C. Take it out and leave it in the open for it to go cold. Once cold, mix all ingredients together and stuff into casings. Simple but try it out and see how it goes for you.
