After browsing through this site for a couple of days I determined that this is exactly the place I need to be to assist me in outdoor cooking while traveling in my small Winnebago.
Currently when we set up the outdoor kitchen we use a single burner convection stove top and a waring commercial 2 burner cookplate. We decided on electric because of all the "burn bans" we encounter here in Texas. We also have our own electric power source that travels with us.
My immediate goal is to master baking in a dutch oven while on a stove top burner.

Welcome aboard!

Yes, we Texans certainly have to get creative when cooking outdoors, thanks to all the burn bans. Fortunately with all the rains this year, it's not terrible for us right now. But I remember not too long back, we were in one for 9-10 months at a time. I ended up buying a CC Explorer for my cooking, along with dutch oven domes, just to be able to still use the black pots while camping. Oh well, that's just Texas. Gold Tooth Smile:
