Great salad to take camping even, or enjoy at home. If camping, I would mix the dressing in advance and bring in a sealed container.

So easy.

1 can chickpeas (garbanzo beans) - drained and rinsed
1 pint grape tomatoes - cut in half
25 or so leaves of fresh basil - chopped.
3 cloves garlic - minced
1 tbsp red wine vinegar
1 tbsp apple cider vinegar
2 tsp olive oil
1/2 tbsp honey
pinch of salt
Mix all together and chill, letting flavors blend for about 20 minutes or more.

Enjoy! I LOVE this salad on a hot summer day.

I bet it would be good on-top of Spinach leaves Thinking Thinking

I'm a fan of vegetarian recipes. And it look like a great dish. I mostly eat vegan food because it is tasty and good for our health too. Thanks for this...

I'll be trying this one out on SWMBO in a few days, :Smile 1: her being vegetarian, sounds good to me Rolling Eyes do think she will like it. Frightened hehehe.
