We have 1.5 acres of okra that we sell to local grocery stores, CSA's, and Farmer's markets. I have only eaten fresh okra once in all of my 25 years Wink - but today after planting a few extra rows and weeding, decided to pick some for myself and give it a go. Years ago I had it stewed with tomatoes, onions, bacon, and such and I remember liking it. I have had it fried and love it. I want to make some kind of stewed okra and put up a few jars of pickled okra, anyone have any good tried & true recipes?

Fried is the only way I like it, but I tolerate it in a good gumbo. Sorry, no recipes. Rolling Eyes

I used this recipe a couple of years back and it was a big hit:

Texas Pickled Okra

Servings: 6

Directions:

Combine vinegar, water and salt; bring to a boil.
Add all remaining ingredients except okra.
Wash and drain whole okra; place in jars.
Pour hot liquid over okra.
Tighten lids; let stand for at least three to four weeks.

Ingredients:

2 c.white vinegar
1 c.water
1/4 c.salt
1 tbsp. dill seed
1 tbsp. mustard seed
1 tbsp. celery seed
2 red hot peppers
2 garlic pods
5 lb. okra
