A cold tomato soup. Yes, I know it's still winter, but I can dream, can't I? :Smile 1:


    1 qt. V-8 Juice
    1 cup fresh seeded tomato chunks
    1 can diced green chiles
    1/2 cup diced celery
    1/2 cup diced green pepper
    1/4 cup Heinz chili sauce
    1 Tbsp. lime juice
    1 tsp salt
    1/8 tsp mace
    1 1/2 Tbsp. cilantro, chopped very fine
    3/4 cup diced red onion
    2 Tbsp. red wine vinegar
    2 Tbsp. olive oil
    1 can (large) diced tomatoes
    1/2 cup diced seeded cucumbers
    1/2 cup diced cooked carrots
    1 diced avocado
    2 Tbsp. taragon
    1 Tbsp. worchester sauce
    1/2 tsp basil
    1 clove garlic, minced
    1 Tbsp. parsley, chopped very fine
    Tabasco sauce to taste


Mix all the ingredients in a large bowl. Cover and refrigerate overnight before eating.

If you put a can of V-8 in the window overnight now, it'll freeze and blow up! Then you gotta find it and clean it up before it thaws - everywhere! Laughing

The first year I was living up here, I was staying with some friends while building my house. Christmas Day, I made some Far Western Tavern Salsa, and there was no room in the refrigerator to store it when I finished. So I took the bowl outside and sat it on top of a snow berm we had pushed up next to the house. By the time we were ready to eat it, it was chilled right down.

There are some advantages to living in a natural ice box! :Smile 1:
